Soil: It is produced on the best soils in Puyméras and Mérindol les Oliviers. Amongst these plots, our vineyard manager selects those vines over thirty year-old.
Vinification: Traditional vinification, ten-day soaking. The Master winemaker carries out a cold maceration for two days before fermentation and fruit extraction. It is then left to age in vats and for one to two years in bottles.
Tasting: A very fruity nose with aromas of raspberry and blackcurrant. Exquisite mouth with fine and round tannins.
Serving suggestions: Red meats ‘en sauce’, game, goat cheese from the Baronnies area.
Aging: Five years.
