Vinification is an essential stage.
As soon as the grapes arrive, we select them according to their health, their phenolic maturity and their integrity. Several techniques are then used in the cellar: punching down, delestage, maceration, pumping over, etc. The wines are matured in vats or in French oak barrels. The vinification of red, white and rosé wines is carried out under the watchful eye of our cellar master and is accompanied by investments that reinforce the respect for quality in the creation of our wines.
